This is the kuih that i done last night which called Nyonya Kueh Ubi Serondeng @ Spicy Coconut Tapioca... Yummy and it is easy to be done =)
You need to prepare all the ingredients as follow
(a) For Ubi Kayu @ Tapioca:-
500 gram - tapioca (skin removed, washed and grated)
2 tablespoons - butter
250 gram - fine sugar
200 ml - coconut milk
50 ml - water
2 - eggs (beaten)
(b) For Serondeng @ Spicy Coconut Floss:-
2 tablespoons dried chili paste(10 to 15 dried chilies) - dried chili (chili seed removed, soaked and grounded)
100 gram - chopped red onion
2 cm slices - chopped ginger
3 cloves - chopped garlic
200 gram - grated white coconut
depends - sugar and salt
2 - 3 tablespoons - cooking oil
After that, you need to put grated tapioca inside a big bowl and mix it with butter, sugar and eggs. Then, add in coconut milk and water. You must stir well all the ingredients. Steam the mixture for 45 minutes or until cooked.
Meanwhile, you need to fry ingredient (b). First, fry red onion, garlic, ginger and dried chili till fragrant. Then, put in shredded coconut and fry it till dried. Add salt and sugar to taste.
Last step is put the spicy coconut floss on the top of cooked cassava while still hot. Only can cut it when it is cold.
